When we first set out to build a brand-new distillery in the heart of the Cotswolds, we knew we wanted to use the best possible kit, traditional methods and the highest quality raw ingredients.

Thankfully we had the guidance of renowned industry legends Harry Cockburn (former Distillery Manager at Bowmore, with many decades’ experience in whisky making) and Dr Jim Swan (fondly known as ‘the Einstein of whisky’ for his formidable knowledge of the science of distillation and maturation).

OUR WHISKY
Whisky production is at the heart of everything we do at the distillery. Our flagship Cotswolds Single Malt is a rich, fruity and sippable whisky. It has a balance and depth of flavour that belies its young age, due to the exceptional attention to detail in our distilling and our use of the finest oak casks for maturation.

We recently launched our cask strength release single malt, Founder’s Choice, aged exclusively in our founder Dan’s favourite casks: shaved, toasted and re-charred American Oak red wine barriques. These uniquely active casks give a rich and intense maturation to the distillery’s fruity spirit, offering toffee, oak and red fruits, and a beautiful, deep colour.

OUR GIN
Distilled with nine carefully considered botanicals, our Cotswolds Dry Gin is a London Dry with an aromatic twist. We distil juniper, coriander seed, angelica root, local lavender, bay leaf, hand-peeled fresh lime and pink grapefruit zest, cardamom and black peppercorn in our copper pot still, resulting in a rich and robust, award-winning gin.

We do not remove the essential oils in our gin as these create a rich flavour and mouthfeel. As a result, our gin forms a unique pearlescent cloud when ice or tonic is added, and it tastes delicious!

From blending your own gin to shaking up some cocktails, we offer a range of experiences where you can get up close and personal with our range of Outstanding Natural Spirits.

The tour begins with a short video which highlights our Cotswolds Distillery story and traditional production methods. Shortly after, we’ll take you around the distillery’s production areas and warehouses whilst giving you a detailed account of how we craft our award-winning spirits, where you’ll be able to see (and smell!) the processes in action. At the end of the tour, you’ll get to sample our range of spirits and liqueurs.
